THE RECIPE FOR COCONUT SNOWBALLS

1 cup unsweetened coconut

1/4 cup honey

2 T. coconut oil

1 t. vanilla

1/8 t. salt

Mix all your ingredients in a blender of food processor.
Then roll into sticky balls, and roll in a bowl of shredded coconut.
Put the balls on a plate, tray, or sheet, and chill in the refrigerator for at least an hour.
(And a warning: you might have to make a lot more than one batch!)

  1. Aw, thanks Lizzie! See though, being thanks-full, and joy-full, and praise-full, in hard, painful, hurtful, sad, bad, times, that’s when it’s HARD. But I’m trying, practicing……..
    I think we’re all so used to this chain of the opposite though, thinking and feeling and living in a way that’s like dark storm clouds over a life, and chains holding down, that to think and feel and live this way is so different and unusual!!! So, maybe this having a thankful heart is something we learn, like Paul said: …”I have learned in whatsoever state I am, therewith to be content.”
    And the coconut snowballs are yummy! And easy, too……..you should try them!
